Only the title, the names and the tapped days are stored, nothing else. No email address, no phone number, no tracking. You are in control: anyone with the link can delete the poll completely, and then everything is gone for good. If nobody deletes it, it stays 12 months after the last activity so you can come back to it, then it is deleted automatically.
